The first poke cake I ever had, was poked with orange Jello, in a white cake and topped with cool whip and it was pretty darn good and nothing like I had ever had before.  Just think how many jello flavors are out there?

You can really go to town!  But we are really loving this creamy strawberry pudding poke cake!

This strawberry poke cake recipe is so moist and delish!  It has plenty of amazing strawberry flavor in the pudding and the cake to make you giddy! 🙂

Jell-o has a pudding flavor called ‘Strawberry Creme‘ and there’s also Sonic’s Strawberry Shake Pudding, which is what I used in this cake.

But with the strawberry cake mix, I thought it might be too over-powering with strawberry cake and strawberry pudding together.  So, I added some sweetened condensed milk, milk and heavy whipping cream to the pudding mix to mellow it out with the whipped cream on top!  Now, it’s “Just right Goldilocks”!

Pudding Tip: Use 1 or 2 pudding mixes in the pudding filling.  By using 2 pudding mixes, it will make it strawberry filling more mousse-like.  If you want more it more pudding like, use only 1 pudding mix.

How to Make Strawberry Poke Cake! 

  1. Preheat oven @ 350 degrees. Spray 9×13 pan with non-stick spray and set aside.

Strawberry Cake

  1. In mixing bowl, combine cake mix according to directions and bake until done.
  2. When cooled, then poke many holes in the cake with the end of a wooden spoon.

Strawberry Creme Passion Pudding

  1. After the cake has cooled, to make the pudding, pour 1 or 2 strawberry creme instant pudding into a medium bowl and add milk and sweetened condensed milk. Using mixer, beat for a couple of minutes.  Using 2 pudding mix, will make it more mousse-like.  If you want more pudding like, use only 1 pudding mix.
  2. Then add in the ½ cup heaving whipping cream and beat for another 2 minutes and pour the pudding mixture on top of cake and fill all the holes.  Mixture will thicken as it chills.
  3. Spread it out by using the back of spoon.
  4. Cover cake and put in refrigerator to set up.

Whipped Cream Layer

  1. Using mixer, whip 2 cups of heavy whipping cream until whipping cream consistency.
  2. Top the whipped cream over pudding mixture.
  3. Set in refrigerator for 2 hours or freeze before serving. Serve cold.
  4. Add sprinkles before serving instead of adding after strawberry pudding poke cake is done, so sprinkles don’t melt into whipped cream.

Substitutions for Strawberry Poke Cake Recipe

  • Cool Whip can be used in place of whipping cream, if you want a shortcut. You need 4 cups total, 1 cup for the pudding mixture and 3 cups for the whipped topping layer.
  • If you can’t find strawberry pudding, you can make this strawberry pudding poke cake with instant vanilla pudding and and add some seedless strawberry jam or crushed freeze-dried strawberries to give it strawberry flavor.

Ingredients
  

Strawberry Cake

  • 1 Strawberry cake mix make cake according to cake mix directions, using eggs, oil, water.

Strawberry Creme Passion Pudding

  • 1 or 2 3 oz boxes Strawberry instant pudding or Vanilla I used Sonic's Strawberry Shake Pudding
  • 1 can sweetened condensed milk
  • 1 cup milk
  • 1 cup whipped cream add 1 cup from whipped cream layer

Whipped Cream Layer

  • 2 cups heavy whipping cream reserve 1/2 cup for pudding mixture - will whip up to 4 cups total or can use store-bought whipped cream - 16 ounces/4 cups
  • ½ teaspoon Vanilla extract
  • cup powdered sugar add up to 1/2 cup if you want sweeter
  • Optional: Sprinkles

Instructions

  • Top pudding layer with whipped cream.

  • Add sprinkles before serving instead of adding after cake is done, so sprinkles don't melt into whipped cream.

Notes

  1. OMG are you kidding me? I would just use vanilla pudding and add in some strawberry jelly, syrup or jam to it to make it strawberry flavored or just leave it vanilla. Hope that helps Vicki! 🙂

    I’ve been looking for the Strawberry pudding, but Walmart no longer carries it. Do you have an idea about what I could use to make your awesome poke cake?

  3. I would just follow the instructions on a Gluten Free Yellow or Yellow Cake Mix to mix the batter. Add in the 3 oz box of Strawberry Jello while you are mixing the batter and bake. Hope that helps and you enjoy!!! Thanks Jacki!

    I’m confused by the reference to “cool whip” in the last instruction. There is no cool whip listed in the ingredients –did you mean whipped whipping cream? Just want to be sure before making it. 🙂 THANKS!

  6. Hi Debbie! I bought it at Walmart. But in a pinch, YOu could probably add some strawberry jelly or syrup to flavor it in some vanilla pudding. It might be a seasonal pudding. Hope that helps!

  7. I looked for the strawberry creme pudding at Meijer and they didn’t have it. Where did you buy the pudding at? Is there any substitutions?
