Lightened up Skinny Apple Peanut Butter Mini Muffins are bursting with peanut butter flavor and bits of Granny Smith apples. I love popping these little mini muffins in my mouth! Aren’t they just soooo cute?

Besides being super moist, (by using banana and peanut butter) I’ve added in a secret ingredient to get some protein in, by adding in some Quaker Banana Nut Protein Oatmeal. So besides skinny, you get a little more protein, and heart-healthy along with extreme yumminess too! Yay!  

However, if you don’t have access to the Banana Nut Protein Oatmeal, you can easily replace with any healthy quick oats.

I love this Quaker Banana Nut Protein Oatmeal for breakfast, and now I have it in these muffins and these 3 Ingredient Peanut Butter Banana Nut Oatmeal {No Bake} Protein Squares as well. Think I should tell Quaker?  Maybe I will… 🙂  

Oatmeal IS one of my favorite things to eat for breakfast, and I’ve been known to eat it for a snack and dinner too.  I absolutely love baking with it.

Oatmeal is definitely a staple in our home.  Now mind you, if you don’t have the Quaker Protein Oatmeal, you can use any kind of oatmeal, you just need about a half cup.

Ingredients
  

  • ¾ cup banana 1 ripe large banana mashed well, 105 calories
  • ½ cup creamy peanut butter 750 calories
  • 2 tablespoons honey or agave nectar 85 calories
  • 1 teaspoon almond or vanilla extract 12 calories
  • 1 large egg 74
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • cup oat flour 120 calories
  • 1 packet of Quaker Oat Banana Nut Protein Oatmeal or 1/3 cup quick oats + 2 Tablespoons brown sugar 240 calories
  • ½ cup Granny Smith Apple 40 calories, diced small
  • 1435 divided by 20 mini muffins = 71 calories each

Instructions
 

  • Preheat the oven to 350 degrees. Spray your mini muffin pan with nonstick spray.
  • In a large bowl, using mixer, combine together the mashed banana, peanut butter, agave or honey, vanilla or almond extract and beat until combined.
  • Add egg and beat into mixture.
  • Beat in the salt, baking soda, oatmeal and oat flour. Do not over-mix or muffins will be become dense and lose flavor.
  • Fold in the diced apples until just mixed.
  • Using a small cookie scoop, scoop 1 full scoop of the muffin mixture into each muffin cavity. Add a sprinkling of oats on top if you want for decorative purposes.
  • If you want larger muffins, this recipe will make 7-8 muffins.
  • Bake mini muffins at 350 for 8-10 minutes. Larger muffins 11-13 minutes.

Notes

If you don't have oat flour, you can process your own oat flour, by taking oats and pulsing them in a blender/food processor until they are a flour like consistency. Be sure to measure the oat flour after pulsing or the amounts will be off.

  1. Hi Deb! You can reduce it to 1/4 cup or leave as is. It’s such a small amount. Normally Oat Flour equals 1 & 1/3 cups ratio to 1 cup of all purpose flour. Hope that helps! Happy Baking!
