When I was growing up, we always had s’mores after school, when we had sleepovers, after football games and camp outs and boy did we love them!  Still do!

This recipe is a different version than the original s’more bars you make over the fire, when you’re craving s’mores and brownies together!  You’ll probably find that I will post multiple combinations of marshmallow, chocolate, brownies and graham crackers because let’s face it, S’mores are irresistible!!’

The sweetness of the toasted marshmallow and chocolate layers with the salty roasted peanuts is amazing and addicting!  This rocky road s’mores brownie recipe pretty much knocks your socks off!

For a change, you could do different variations and top with caramel bits, chopped Heath or Snickers bars or your favorite type of nuts!

Ingredients You Need for Rocky Road S’more Brownies Recipe

Graham Cracker Crust

  • graham cracker crumbs
  • sugar
  • unsalted butter

Brownie Layer

  • unsalted butter 
  • unsweetened cocoa powder
  • milk chocolate chips or semi-sweet chocolate chips
  • vanilla
  • eggs
  • flour
  • brown sugar
  • salt
  • milk or almond milk

How to Make Rocky Road S’more Brownies 

  1. Preheat oven to 350.
  2. Line an 8×8 inch pan with foil or waxed paper and spray with cooking spray.
  3. In a medium bowl, add graham cracker crumbs, sugar and butter together and pulse together
  4. until mixture comes all together. (you can also use a pastry cutter)
  5. Press evenly into prepared pan.
  6. Bake 10 minutes.
  7. While the crust is baking, prepare the brownie layer.  At this time you can make either the homemade brownies or make a boxed brownie mix that fits into your 8×8 pan, following the directions how to make the brownies.
  8. In a medium saucepan, melt butter, cocoa powder, and chocolate chips together, stirring until smooth and melted over medium heat.
  9. Remove from heat and transfer chocolate mixture to a large bowl and let cool a few minutes.
  10. Stir in eggs, flour, brown sugar, almond milk, vanilla and salt, and mix until combined.
  11. Pour mixture over baked graham cracker crust.
  12. Bake 35-45 minutes until an inserted toothpick comes out clean.
  13. Remove from oven.
  14. Sprinkle marshmallows, Hershey bar chunks and peanuts over brownie layer.
  15. Turn oven to low broil.
  16. Place pan back in oven and watch very closely for about 2-3 minutes until marshmallows are toasted or desired roasted color.
  17. Remove from oven and chill until completely cool.
  18. Cut into bars and store in airtight container at room temperature.

Graham Cracker Crust

  • 1 ¼ cup graham cracker crumbs
  • 4 tablespoons sugar
  • ½ cup unsalted butter

Brownie Layer - Can Make Homemade or Use Boxed Brownie Mix for 8x8 pan

  • 1 cup unsalted butter
  • ½ cup unsweetened cocoa powder
  • ½ cup milk chocolate chips or semi-sweet chocolate chips
  • 2 teaspoons vanilla
  • 2 large eggs
  • 1 cup all-purpose flour
  • 2 cups brown sugar
  • ½ teaspoon salt
  • 1 cup milk or almond milk

Marshmallow, Peanut and Hershey Bar Topping

  • 3 cups Kraft chocolate stripe marshallows cup into quarters or mini marshmallows
  • 3 Hershey Bars cut up into squares
  • ½ cup salted roasted peanuts

  1. Definitely add what ever nut or nuts you like, just use the same measurement as the recipe calls.
    Some other tree nuts you could use if it’s not a nut tree allergy:

    brazil nuts
    cashews

    walnuts

  2. The recipe sounds wonderful…we are a peanut free household..allergies. Could I substitute any other nut?
