  • Firstly, we love to add oats to bars not only because the way they taste, but also because of their amazing healthy benefits. We used old-fashioned rolled oats in this recipe but you could also use quick 0ats, no problem.
  • Containing just the right amount of butterscotch and chocolate chips, coupled with the wholesome goodness of oats, it’s a simple, yet fulfilling snack that will leave you wanting more.
  • Even a combination of oats are amazing, so use whatever you have available on hand because you need these now!  🙂 Note: Quick oats have a mild flavor with a softer texture than the rolled oats.
  • You can really load these up with some yummy goodies, ya know?  Like nuts, m&m’s, pretzels, etc…but the combo of butterscotch and chocolate is one of our faves!
  • Bars are super easy to make!  Just mix them together and press them into the pan!

Oatmeal Butterscotch & Chocolate Chip Cookie Bars

Perfect for an afternoon snack or a dessert surprise, these bars will make any day a sweeter one. Not only are these bars easy to make, they’re also healthier than traditional sweets, with a winning combination of fiber-rich oats, wholesome butterscotch morsels, and semi-sweet chocolate chips.

How to Make Oatmeal Butterscotch & Chocolate Chip Cookie Bars 

  1. Preheat oven to 350 degrees F. Lightly grease an 8×8 pan with non-stick cooking spray. Line with parchment for easy removal.
  2. In a separate bowl combine the dry ingredients of flour, salt, baking soda,and rolled oats together, set aside.
  3. In a large mixing bowl, using mixer or by hand beat together the butter, brown sugar, and white sugar until smooth and light.
  4. Add egg and vanilla and beat in.
  5. Add dry ingredient mixture to wet mixture and continue mixing together until combined. Fold in chocolate and butterscotch chips, reserving some for the top of the bars.
  6. Spread or press cookie dough into the bottom of the prepared pan.
  7. Sprinkle remaining butterscotch and chocolate chips on top.
  8. Bake for 25 to 30 minutes or until golden brown. After 25 minutes, check cookie bars by giving the pan a little shake. If it jiggles in the middle, put the pan back in and try again every 5 minutes until there is no longer any jiggle and it’s better to not overbake.
  9. Remove from the oven and let cool 10 minutes before cutting.

  • Store them in an airtight container in the refrigerator for up to 5 days. Enjoy them cold, at room temperature or warmed if you prefer.

  • For ooey gooey oatmeal bars, just don’t overbake for the chewiness of the oats and the slightly gooey center.  They will continue baking after you take them out of oven.
  • If you’re one of those peeps that can’t wait until these oatmeal bars to cool off, you’ll want to dig in right away with a spoon for melty chocolate and butterscotch in your bars!  Otherwise, wait until they cool completely to slice into bars.
  • For nicely cut bars, place bars in fridge to firm up, then slice into bars.
  • Double recipe for large batch in 9×13 pan.
  • Make these gluten free by switching out oats with gluten free oats!

  • ½ cup unsalted butter at room temperature

Other options: Can easily make these gluten-free by using flour like Bob's Red Mill 1 to 1 and gluten-free oats.

  1. These were terrific! I used large dark chocolate chips along with the butterscotch and mixed it all in rather than on top. Also briefly pulsed part of the oats in the food processor to make sure these weren’t too dry and measured afterwards. I will certainly be making them again. The perfect combo of ingredients. 🙂

  3. I did the following adjustments.
    I used one flax egg to sub for the egg.
    I did half cup of semi sweet morsels.
    I added about 1/3 cup of chopped walnuts.
    I used salted butter because that’s what I had on hand and did a good pinch of salt.
    This recipe is awesome my coworkers are raving about it as we speak.

  4. Yum…I love the texture of the oats in these bars. I used a dark chocolate chip because I prefer less sweet desserts. Coupled with sweet butterscotch, I found the combination was perfect. This recipe is a keeper.

  5. Yes, it would require a different pan size. I updated if doubling use a 9×13 pan. Thank you, normally I do put the pan size when doubling but I didn’t finish it up in the instructions. Thank you for letting me know. 🙂
