Healthy Dark Chocolate No-Bake Cookies {Optional Gluten-Free, Vegan & Non-Dairy too!}

And, the best thing? It truly satisfies you when you crave something sweet, rich and decadent. (which I often do!)
They say dark chocolate is good for you…well you know what? They are right! Quality dark chocolate is rich in fiber, iron, magnesium copper, manganese and other minerals.
Cocoa and dark chocolate have a wide variety of powerful antioxidants, more than a lot of other foods. Add in rolled oats, almond butter and some almond milk and you have one helluva health kick going on!

Dark Chocolate No-Bake Cookies {Gluten-Free, Vegan & Non-Dairy too!}
Ingredients
- 1/4 cup almond butter or peanut butter or your favorite 'nut' butter
- 1/3 cup vanilla unsweetened almond milk or
- 1/2 cup dark chocolate chips I used Ghirardelli 60% Chocolate Chips, but for vegan option, use vegan chips
- 1 & 1/2 cups old-fashioned rolled oats, quick oats or gluten free oats, I used Flahavan's Irish Oatmeal
Instructions
- Prepare a wax paper-lined baking sheet and set aside.
- Use microwave or heat almond butter, vanilla almond milk, dark chocolate chips in a saucepan over low heat until the chocolate melts.
- Once the chocolate mixture is smooth and melted, stir in the oats and remove the saucepan from heat.
- With a small ice cream scoop, (1 Tablespoon) scoop about 8 scoopfuls onto the wax paper-lined baking sheet.
- Let them set in the fridge for about 10-15 minutes and good eating to you!

perfect! Love them! I have extreme food allergies and out the 27 things I can eat… oats, cocoa, and almonds are 3 of them! I made these and am in heaven on earth. If we become blessed with an 8th child I am absolutely taking these with me to nibble on during labor for a boost of energy. Thanks!

For South-Africans, almond butter costs an arm and a leg and almond milk? I haven’t seen it before. I did see the recipe said that you can substitute almond butter for peanut butter but is there something else you can substitute almond milk with?
