What ‘Party’ You Say?

Well, it is my daughter’s birthday, “Happy Birthday Amber!” and these were made with love (and delivered) in her honor. So that is why I only got one. 

She is after all, the Birthday Girl and I’m just the taste-tester, so I got one bar for me and she gets the rest.  Besides, that way I don’t eat them all!

She likes it when I make gluten-free desserts, so it sort of makes sense to make her a celebratory gluten-free dessert.

I was thinking about baking her a Rainbow Sprinkle Cake, because that’s so traditional, but I didn’t have a lot of time and these irresistible bars are super easy to make.  They turned out beautifully, so it worked out in both of our best interests in the end. 

And now they’ve left the house.  Amber and the GF Healthy Birthday Peanut Butter Chocolate Chip Bars.  I. can’t. stop. thinking. about. those. bars. ugh.

What’s in these GF Peanut Butter Chocolate Chip Bars That Make them Sooo Delish?

  • These bars have almond flour and coconut flour in them. The coconut flour gives the bars a finer, velvety texture when combined with the almond flour and they taste incredible.
  • I used melted butter, but you can substitute coconut oil, walnut oil, or whatever oil you love using and I used granulated sugar because it’s always on hand and I like the way it tastes, but coconut sugar can also be used as well.
  • Other substitutes for the peanut butter, is any nut butter.  tahini butter, almond butter or cashew butter would be super yummy too!
  • Chocolate chips?  I used mini and regular sized semi-sweet chocolate chips, but you could use chocolate chunks, nuts, candy bar chunks, peanut butter chips, it’s endless. If going vegan, use dairy-free chocolate chips.
  • And of course, we can’t forget the sprinkles. Gotta have the sprinkles!

Ingredients for Healthy Peanut Butter Chocolate Chip Bars

Seriously, as I said, these gluten free chocolate chip bars are so super easy to make, you don’t even need a mixer

  • eggs or flax eggs or ⅓ cup unsweetened applesauce
  • granulated sugar or coconut sugar, or see in notes other sugar options
  • peanut butter or favorite nut butter or sugar-free
  • butter melted and cooled (can also use cooled ¼ cup coconut oil)
  • vanilla extract (I like Nielsen-Massey Vanilla Extract)
  •  almond flour (I used Bob’s Red Mill Almond Flour)
  • coconut flour, not packed but measure correctly (I used Purely Amazing Flour)
  • baking soda
  • salt
  • mini chocolate chips, You could Lilly’s (dairy-free, GF & Sugar-free) or Enjoy Life
  • Sprinkles for the top, Could use your favorite nuts or sea salt for other options

How to Make Gluten-Free Peanut Butter Chocolate Chip Bars

  1. Preheat oven to 350 degrees F.
  2. Line a 8×8 inch baking pan with parchment paper and spray with nonstick cooking spray to prevent sticking. Set aside.
  3. In a large bowl, whisk together the eggs, sugar, peanut butter, melted butter and extract until smooth.
  4. In another bowl whisk together the almond flour, coconut flour, baking soda and salt well then add to the wet ingredients and mix to cookie dough consistency, then fold in the chocolate chips.
  5. Add batter to the prepared pan and spread evenly. Bake for 18-25 minutes until edges are just slightly golden. We want to slightly underbake these so they stay gooey.
  6. Once done baking, immediately sprinkle with with colored sprinkles
  7. Remove bars from pan after 15 minutes and cut into bars. You get 12 to 16 bars for the Birthday Girl or Boy!!
  8. Also delicious with a scoop of healthy peanut butter cup ice cream for a yummy sundae.

Vegan & Keto Options too!

To make these vegan substituting eggs and chocolate chips: 2 flax egg 2 tablespoons flaxseed meal + 6 tablespoons cold water Mix in a small bowl, then place in the fridge for 5 minutes to thicken up before adding to wet mixture. Replace vegan chocolate chips with regular chocolate chips.

  • 2 eggs or 2 flax eggs or 1/3 cup unsweetened applesauce
