Keto Chocolate Cream Cheese Frosting – For thinner layer, halve recipe

  • cream cheese, softened – To soften cream cheese, put in microwave for 20 seconds.  It works great! 
  • butter, melted and cooled
  • unsweetened cocoa powder
  • vanilla extract
  • Lakanto Powdered Sugar, use more if needed or if you want it sweeter
  • salt

How to Make Easy Keto Chocolate Cake

Easy Keto Chocolate Cake Recipe

  1. Preheat oven to 325 degrees F. Generously grease an 8×8 baking dish with butter or line with parchment paper and spray with non-stick spray, .
  2. In a bowl, whisk together the eggs, melted butter, sugar, and vanilla extract until well combined.
  3. Gradually whisk in the almond flour, cocoa powder, salt and baking soda and mix together well so everything is combined without over-mixing. (This is a thick batter.)
  4. Pour cake batter into the prepared pan and smooth out the top with a spatula. Bake until the center is set and a toothpick inserted in it comes out clean, 20 – 25 minutes.
  5. Let cake cool in the pan completely before frosting.

Keto Chocolate Cream Cheese Frosting

  1. Using mixer, whip all the frosting ingredients in a medium bowl until smooth and fluffy, 1-2 minutes. Modify as needed.
  2. Frost and serve.

Storing Keto Cake

Keep cake stored in the fridge completely covered, but remove and allow to come to room temperature before serving!

  • ½ cup unsalted butter melted and slightly cooled
  • ½ cup Lakanto Classic Sugar
  • 1 teaspoon vanilla extract

  • 1 /2 cup Lakanto Classic Powdered Sugar use more if needed or if you want it sweeter
  • ¼ teaspoon salt

    You just need to whisk it together until well combined. Was your butter slightly cooled, because the only thing I can think of it was too hot for it to turn foamy. But even then, if you let the mixture cool down a bit and then give it a whisk it should be fine to proceed with the recipe. Hope this helps?

  2. When we whisk the sugar, eggs, melted butter etc. how long do we need to whisk it for? Isit suppose to turn foamy or what should we be expecting before adding in the dry ingredients?

  3. I substitute the same amount if butter with coconut oil and it was absolutely perfect.
    I have high blood cholesterol, that’s why I always search for healthier alternatives. Next time, I will try it with a vegetable oil.

  4. Great recipe! I followed it exactly as written and it was fantastic. Perfect crumb and texture! I made a plain cheesecake frosting for it and topped it with sliced almonds. This cake was gone in 2 days. I may reduce the cocoa powder just a little next time. Otherwise, one of the best keto chocolate cake recipes I’ve tried.

  5. I would just leave the chocolate out all together if you don’t want chocolate flavor. Add some extra vanilla flavoring to kick it up a notch. 🙂 Hope you enjoy!

  6. I don’t see why not? Same temperature as in recipe for 15 to 20 minutes. Test the doneness of cupcakes by inserting a wooden toothpick into the center. Enjoy Jen!

  10. The best keto chocolate cake recipe I have made! I substituted swerve granulated in the cake and swerve powdered in the icing and it tasted great. I also made this in cupcake form instead of the cake and it made one dozen cupcakes. Yum!

  11. I’ve been looking at a lot of keto recipes for chocolate cake, and also read many reviews of dryness etc.
    But after reading reviews from your recipe, I didn’t see anything about dryness!

    I made this at 1am and had just had a small slice right out the oven and without frosting and all I’m going to say is PERFECT!

    Chocolate Syrup:
    1 cup whipping cream
    1/3 cup powdered sugar, I use Lakanto
    2 1/2 ounces unsweetened chocolate finely chopped (or a little over 1/3 cup)
    1/2 tsp vanilla extract or maple syrup
    In a medium saucepan over medium heat, whisk together whipping cream and powdered sugar. Bring to a simmer and remove from heat.
    Add chopped chocolate and let sit 5 minutes while chocolate melts. Add vanilla extract or maple syrup and whisk until smooth. Can also do this in the microwave.

  20. Hey Ann! Room temperature 1-3 days completely sealed. You can store it in the fridge for up to 5 days sealed but it’s best if you microwave it or let it come to room temperature before serving. We love microwaving it 10-20 seconds and it tastes really yummy that way. I really hope you enjoy!
