I love cookie pies, but sometimes they can be a little dry, so when you find a good recipe, stick to the basic cookie recipe and modify your goodies. 

Just make sure not to over bake your cookie pie you will have a super, moist cookie pie!  Pssst…you don’t even have to add the frosting if you are concerned with ‘extra’ calories. But, I like the frosting added, giving it a wonderful celebration party effect.

Ingredients for Birthday Party Cookie Pie

Birthday Cookie Pie Recipe

  • all-purpose flour
  • baking soda
  • cornstarch
  • light brown sugar
  • granulated sugar
  • unsalted butter
  • salt 
  • eggs
  • vanilla extract
  • Ghirardelli 60% Cacao Bittersweet Chocolate Chips or chocolate chips of choice
  • Reese’s Chocolate Peanut Butter Chips
  • Mini Reese’s White Chocolate Peanut Butter Cups

Vanilla Buttercream Frosting w/option to add more Sprinkles

  • unsalted butter
  • confectioners sugar
  • salt
  • vanilla
  • milk
  • Optional: ½ cup sprinkles in the frosting
  • Add more for the top of the cookie pie!

How to Make Birthday Party Cookie Pie

Birthday Cookie Pie

  1. Preheat the oven to 350 degrees and spray a 9 inch pie dish or pan with non-stick cooking spray and set aside.
  2. In a medium bowl, sift together the flour, baking soda, cornstarch, and salt and set aside.
  3. Using a mixer, beat together the sugars and melted butter on medium speed until well combined.
  4. Add in the egg, egg yolk, and vanilla extract until well combined.
  5. Gradually add in dry ingredients into the butter/sugar mixture until well combined.
  6. Using a large wooden spoon, fold in the all the chocolate chips until just combined.
  7. Transfer the batter out into the prepared pie dish and smooth out the top.
  8. Evenly space out the 8 Mini Reese’s Peanut Butter Cups around the cookie pie edge about an inch in from the edge and lightly push them in, with tops still exposed. If you are adding more cups, just add them within the circle of cups.
  9. Bake for 25 minutes.
  10. Allow the cookie pie to cool completely before frosting. (If you are not frosting, just add your sprinkles to the top as desired. If you want to just do a frosting border instead of doing the frosting the whole pie, just halve the frosting measurements.)

Vanilla Buttercream Frosting

  1. Using a mixer, beat 1 cup softened butter, 3 ½ to 4 cups confectioners sugar, 2 pinches of salt, 1 tablespoon vanilla, 1-3 tablespoons milk until desired consistency.
  2. Optional: Add in about ½ cup sprinkles and fold in.

Frosting the Birthday Cookie Pie

  1. Frost center of cookie and pipe border on top of cookie pie and add sprinkles and decorate as desired. Serve!

Cookie Pie

  • 2 cups all-purpose flour

  • 1 large egg + 1 large egg yolk
  • 1 tablespoon vanilla extract
  • 1 cup Ghirardelli 60% Cacao Bittersweet Chocolate Chips
  • ½ cup Reese’s Peanut Butter Chips
  • 8- 12 Mini Reese’s White Chocolate Peanut Butter Cups

Vanilla Buttercream Frosting w/option to add more sprinkles

  • 1 cup softened butter
  • 3 ½ to 4 cups confectioners sugar
  • 2 pinches of salt
  • 1 tablespoon vanilla
  • 1-3 tablespoons milk

Notes

  • I love using Ghirardelli 60% Cacao Bittersweet Chocolate Baking Chips. They are Ghirardelli 's darkest chocolate chips, delivering intensely rich chocolate flavor. And they are a little larger than regular chocolate chips. So Good!
  • For the border, I just snipped a hole in a large zip-lock bag and piped some round balls around the cookie twice.

  2. Yum!Pinning and printing! Looking at way too many “healthy”recipes!Am a firm believer in all things in moderation! A balance in the good,bad even the ugly(although I think there are not many things to classify as ugly, visually that is). Plenty of adjectives, though!! Having been in the fitness biz, saw so many fads. At 54,having been blessed with good genes, and a hyperactive personality, have been able to maintain a healthy balance and weight. So, have a piece of cookie pie, not the whole pie, or even half. Gym membership?Not needed. Just move,any time you can. Park far from the Target entrance, take stairs, when you can. Keep moving and keep that metabolism going. Was bedridden for over 2years.Would do crunches, move legs and arms, anything I could think of. So, thanks for a New Years Treat!
