Delectable brownies topped with sweet fluffy marshmallow fluff cream and mini marshmallows for a thick marshmallow layer.  Then we covered them with the most yummy chocolate ganache! WOW!

Who else is fascinated and totally obsessed with chocolate covered fluffy marshmallow anything? If you do, let’s kick the chocolate covered fluffy marshmallow thing up a notch, because Chocolate Covered Fluffy Marshmallow Brownies just really sound amazing!  Don’t they??

I think it’s safe to say that the marshmallow is everyone’s bestest friend in the land, especially when they get together with chocolate brownies, our other bestest friend!

Ingredients You Need

Fudgy Brownies

Marshmallow Layer

Chocolate Layer

  • butter
  • chocolate chips, use either semisweet chocolate chips or milk chocolate chips.

How to Make Marshmallow Fluff Brownies!

  1. Preheat oven to 350 degrees F and spray an 8×8 baking pan with non-stick cooking spray lined with parchment paper.

Brownies

  1. In a medium saucepan, melt ½ cup butter. (Can also microwave)
  2. Remove from heat, and whisk in sugar, vanilla and eggs.
  3. Beat in ⅓ cup cocoa, ½ cup flour, salt, and baking powder.
  4. Spread brownie batter into prepared pan.
  5. Bake in preheated oven for 22-27 minutes. Do not over bake.

Marshmallow Layer

  1. As brownies are cooling, add ½ to 1 cup of mini marshmallows on top of brownies and spread out.
  2. Place marshmallow cream in microwave for 20 seconds and stir with a butter knife and pour on top of the marshmallows and even the marshmallow cream out.

Chocolate Layer

  1. Melt butter in microwave and add chocolate chips and stir to coat the chocolate chips. Place back in microwave for 30 seconds and mix until creamy. Place back in micro for 10-20 seconds if needed.
  2. Pour chocolate mixture on top of marshmallow layer and spread out quickly.
  3. Let brownies cool. Some of the marshmallow might peek out of the chocolate, because of the marshmallows, but it’s ok. ???? Gives it character.
  4. Lift brownies out of pan and cut on a board with parchment paper or you can cut in the pan. Keep brownies sealed in an airtight container.

Serving Brownies

These marshmallow fluff brownies are best served and left out at room temperature. You can cut them after they have cooled. They’re really gooey and fudgy and full of chocolate flavor….OH MY! Total chocolate and marshmallow heaven…

Tips for Chocolate Marshmallow Fluff Brownies

  • One thing I always find helpful, is adding 2 sheets of parchment paper to my 8×8 baking pan by laying them crisscross in the pan, or at least one.  Spray with cooking spray, then adding a sheet of parchment paper one way, spray again with cooking spray and place parchment paper crisscrossing the paper.
  • Parchment paper is the best and I use it for most all of my cookies, bars, brownies, breads and cakes.  It’s one of my most prized tools of choice when baking.
  • Spray again with cooking spray on top of the parchment paper and make sure your parchment paper is long enough on the sides so you can pull the baked brownies easily out of the pan and you can cut them easier.  Once lifted out, cut the brownies and devour.  Who can resist?
  • Don’t recommend putting these in the fridge.  The chocolate turns to chocolate shell.  It’s not as good if you ask me and it’s harder to cut into when you are slicing them.  I’m sure if you did put them in the fridge, just pop them in the microwave for a few seconds for a warmed up delicious treat!

Chocolate Topping Options

Instead of making the chocolate layer above, you can substitute the chocolate layer with a tub of chocolate frosting you can purchase already premade.  Just place it in the microwave for 10-20 seconds, so it’s pourable and easy to spread on top.

Make sure not to overheat the frosting as it will ruin the frosting.

Marshmallow Layer Options

  • For the marshmallow layer, you can opt to leave the marshmallows out of the marshmallow cream if you wish and you can also make the marshmallow layer thinner by adding less marshmallow cream.
  • I like to add the marshmallows in the marshmallow cream, because it makes the marshmallow layer bumpy and you may even have some marshmallow cream poking out in various places with the chocolate layer.  I think it just adds a little character and I love the chocolate crackles!
  • Use half of the ingredients if you want thinner layers of marshmallow and/or chocolate layers.Chocolate Marshmallow Brownies
