Ingredients
  

Peanut Butter Snack Cake

  • 1 cup all purpose flour
  • ¾ cup sugar or xylitol
  • ¾ teaspoon salt
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk or almond milk, Greek yogurt or coconut milk
  • ¼ cup canola oil
  • 6 tablespoons water
  • ½ cup creamy peanut butter or almond butter

Butterfinger Peanut Butter Cream Cheese Frosting

  • 4 oz package cream cheese room temperature
  • ¼ to ½ cup creamy peanut butter
  • 1 tablespoon heavy cream or almond milk
  • 1 teaspoon vanilla extract
  • 1 ¼ to 2 cups powdered sugar start with least amount and add more if needed
  • 5-10 Mini Butterfinger Bars or a large Butterfinger bar, add as much or as little as you want!
  • Pinch of Salt, optional

Instructions
 

Peanut Butter Snack Cake

  • Preheat the oven to 350 degrees Line an 8x8 pan with parchment paper and spray with non-stick cooking spray.
  • In a large bowl, whisk together the sugar, flour, salt, baking powder, and baking soda.
  • In another bowl, whisk together the egg, vanilla, buttermilk, oil, water, and peanut butter.
  • Add the wet ingredients to the dry ingredients and stir together to combine. Pour into the baking pan.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool.
  • Serve plain or with Butterfinger Peanut Butter Cream Cheese Frosting.

Butterfinger Peanut Butter Cream Cheese Frosting

  • Use a hand mixer to beat the cream cheese and peanut butter together and beat until fully incorporated.. Add vanilla, powdered sugar and cream and beat until spreading consistency.
  • Crush Butterfingers on top of cake and serve when ready!
    Other options of toppings on the cake? Use Reese’s peanut butter cups, Crushed Heath Bars or some chopped salty roasted peanuts!

Notes

  • For a lighter peanut butter cream cheese frosting, fold in 1 cup of whipped cream or fresh whipped cream into the frosting.
  • Without cream cheese - Just omit cream cheese for peanut butter frosting.
