I have been snacking on blueberries a lot lately!  I’m happy to report, blueberries are one of the world’s healthiest foods!  One of the newest, exciting new evidence about blueberries, is that blueberries can improve memory.  Thank goodness for eating even more blueberries NOW!

Why We Love These Blueberry Cream Cheese Crumble Bars

  • This crumble bar recipe is super easy using a cake mix for the cookie base and cookie crumbles on top, so that’s an easy double whammy because you don’t have to make 2 different layers.
  • The blueberries and the cream cheese mixture is sandwiched in between the cookie base and crumbles, making these bars scrumptious and bursting with blueberry goodness with every bite.

How to Make Blueberry Cream Cheese Crumble Bars 

  1. Preheat oven to 350°
  2. Spray 9×13 baking pan with cooking spray, or line with foil and spray foil to easily take bars out of pan to cut squares.
  3. In large bowl, combine butter, one egg and cake mix. Mixture will be very stiff, so you might opt to use your hands (which I did.)
  4. Reserve 1 cup of cake mixture for crumble topping, set aside.
  5. Press the remaining cake mixture in the bottom of the pan and bake for 10 minutes.
  6. While crust is baking, in a mixing bowl using mixer, beat cream cheese, sugar, vanilla, lemon juice and remaining egg until smooth.
  7. Spread cream cheese mixture over top the partially baked crust.
  8. Evenly arrange the blueberries over the cream cheese mixture and the sprinkle with remaining crumbles.
  9. Bake for 25-30 minutes until center is set and crumbles on top turn golden brown.
  10. Cool completely on wire rack.
  11. Chill approximately 30 minutes before serving.
  12. For a quick glaze, ½ cup powdered sugar and 1 – 2 tablespoons milk, mix with a fork to get a thick pourable consistency.  Tip: I put this mixture in microwave for 10-15 seconds and then pour it on bars.  Glaze with firm up as it cools.

Storing 

Store in an airtight container in refrigerator for 4-5 days, if they last that long! 

If you’re not into blueberries, feel free to substitute other fruit, drizzle white chocolate on top, or if you are real adventurous, try other cake mix flavors.  Lemon cake mix would be incredible!

    These blueberry crumble bars sound fabulous. Although I’m a chocoholic too, I LOVE me anything blueberry and especially if it’s got a crumble on top. These look seriously delish and addictive!

  3. these sound so good! i picked up a few containers of blueberries the other day bc they were 88 cents each… and there’s a reason they were so cheap. into baked goods they need to go, so they can soften and concentrate and get tastier in the oven (:

  4. I don’t think you’ll get the same effect as real blueberries, but if you had canned blueberries like pie filling or frozen those should work like fresh. You could also substitute pretty much any fruit. I did strawberries for a post later and they turned out really good too Deepika!

  5. Kim, I love my chocolate desserts..But these blueberry crumble bars look dangerously addictive!! Fresh blueberries are really very expensive here, do you think I can use dried ones for making these?
