OUR RECOMMENDATION:

Pick out large, ripened strawberries.  The larger the strawberries, the more cheesecake we can stuff inside!  🙂

OMG Chocolate Cheesecake Stuffed Strawberries

How we made Chocolate Cheesecake Stuffed Strawberries!

  1. Wash and dry the strawberries. Then hull the berries and cut a small sliver from the bottom so they stand upright.
  2. Mix the cream cheese, sugar and cocoa in a mixer on high speed.  Add vanilla and softened butter and mix.
  3. Add melted chocolate, mix.
  4. Add in the whipped cream and and mix until combined.
  5. Put the mixture into a pastry bag with a large tip or put into a plastic bag and cut the corner off.
  6. Pipe the cheesecake filling into the strawberries.
  7. Sprinkle with shaved chocolate, sprinkles or make some chocolate hearts with some melted chocolate.
  8. Refrigerate until ready to serve. The strawberries are best served the same day they are filled.

Other Strawberry options:

After you have hulled and slivered the bottom of the strawberries, you can dip the bottoms in melted chocolate and them dip them in Oreo cookie crumbs as an added treat. Enjoy!

If you don't want chocolate cheesecake and want to opt for traditional, just omit the chocolate cocoa and melted chocolate.  Add a couple of teaspoons of lemon juice and sprinkle them with graham cracker crumbs. Can also dip the bottoms with white, milk or dark chocolate and dip in more graham cracker crumbs.  For white chocolate cheesecake, substitute white chocolate for the melted chocolate.

Chocolate Heart Peanut Butter Cookies

January 25, 2021 By Kim Lange 4 Comments

These Chocolate Heart Peanut Butter Cookies are irresistible for Valentine's Day!  These soft, thick and chewy Peanut butter chocolate chip cookies are loaded with peanut butter and chocolate flavor and with a heart-shaped chocolate in the middle!   Peanut Butter and chocolate each are great, but together they even better!

Chocolate Heart Peanut Butter Cookies

We took our viral “Phenomenal” Milk Chocolate Chip Peanut Butter Cookies and gave them a simple makeover just by adding a heart shaped chocolate candy in the middle of each cookie.  We're obsessed!  Everyone adores peanut butter and chocolate!  We made our cookies smaller though, to better fit the candy hearts in the middle by using a medium scoop or 1 & 12 tablespoons to 2 tablespoons worth. They are soooo cute!

Chocolate Heart Peanut Butter CookiesCOOKIE DOUGH TIPS:

These cookies are awesome as is, but further chilling of the dough before baking will prevent the cookies from spreading too much and rise a little taller, as with most cookie recipes. These cookies were not chilled in the photos, some were made with chocolate chips and some were not. To get the best cookie thickness, bake a few cookies and see if you like the result. If you want them thicker, chill 20 minutes or longer. Cookie dough will last a few days in the refrigerator if you don’t want to bake them right away. But if you want to keep them for longer than just a few days, I recommend freezing the dough balls.  Just scoop them up with a cookie scoop and  freeze them until solid, then transfer them to a ziplock bag to store in the freezer.

OTHER COOKIE OPTIONS:

  • You could try chunky peanut butter instead of creamy peanut butter for extra nuttiness and crunchiness or you could even add in some chopped roasted peanuts, toffee bits or almonds!
  • Try adding other candies on top like mini peanut butter cups, truffles, candy kisses or any type of candies that go with peanut butter and chocolate will also make them decadent and delish!  Change out candies with holidays, like Easter with mini Easter eggs, and Halloween with peanut butter cups, etc!
  • We love milk chocolate chips, but you can leave out the chocolate chips all together!

HOW LONG DO THESE COOKIES LAST?

Keep these cookies in an airtight container on your countertop, you do not need to refrigerate them. They will stay fresh up to a week.

No Bake Mini Triple Chocolate Cheesecakes

January 20, 2021 By Kim Lange 8 Comments

These dreamy No-Bake Mini Triple Chocolate Cheesecakes are the perfect solution when you want to impress your guests at any fun gathering or party!  These mini chocolate indulgent treats are simply adorable to serve up on a party tray or individually.  And since these are no bake, you can make them ahead of time until you're ready to share!

Triple Chocolate Heaven!  We're using premium quality semi-sweet chocolate chips, cocoa powder and Oreos to make these deliciously chocolate flavored!  All is good in the world for chocolate lovers!

I mean who could resist chocolate velvety cheesecake, with an oreo crust and a super creamy chocolate whipped cream on top?  It sounds pretty damn good to me!

No Bake Mini Triple Chocolate CheesecakesTips for Perfect Mini Cheesecakes

  • For the crust options, feel free to change it up!  Swap out the Oreos for any other cookie you prefer. Nutter Butters, graham crackers, or any type of Oreo cookies are all delicious ideas.
  • Make sure your cream cheese is softened. This helps the cream cheese blend smoothly with the sugar and cocoa, so you don't have lumps of cream cheese.
  • Plan ahead to chill the cheesecake for at least 4 hours.
  • Make sure you lightly spray your cheesecake pan liners with non-stick cooking spray, so your cheesecakes don't stick to the sides.  This Chicago Metallic 12-Cup Mini-Cheesecake Pan is what I used.  This elegant pan is the key to baking perfectly delicate mini cheesecakes easy to use with the "Lift and Serve" removable bottom inserts for individual servings.  Or you can use just a standard muffin pan with cupcake liners.
  • Firmly press the Oreo crust down into the pan or liners so it’s compact and neat. I love using this Wood Fox Run Tart Tamper, but you could easily use a shot glass or something similiar.

Ingredients

Oreo Crust

  • 15 Oreo Cookies about 1 ⅓ cups
  • 4 Tbsp unsalted butter melted

Chocolate Cheese Cake Filling

  • ½ cup semi-sweet chocolate chips or semi-sweet chocolate chopped
  • 12 oz softened cream cheese (1 & ½ packages)
  • 2 Tbsp sour cream or plain Greek yogurt
  • ½ cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • ⅓ cup  heavy whipping cream, cold Can also use ⅔ cup of Cool Whip, omit the 2 Tbsp. powdered sugar if you do.
  • 2 Tbsp powdered sugar

Chocolate Whipped Cream

  • 1 cup heavy whipping cream or 2 cups Cool Whip, minus the ¼ cup of powdered sugar
  • ¼ cup powdered sugar omit if using prepared whipped cream
  • 2 Tbsp cocoa powder can omit if you don't want chocolate whipped cream.

Instructions

Oreo Crust

  • In a food processor, pulse Oreo cookies until fine crumbs and mix in the melted butter.
  • Divide cookie crumb mixture into a 12-Cup Mini-Cheesecake Pan or use a standard muffin tin with paper liners sprayed with nonstick cooking spray. Make sure you grease your mini cheesecake pan if you are using that, so they remove easily.

Chocolate Cheese Cake Filling

  • Melt semi sweet chocolate morsels in a microwave safe bowl for 1 minute. Stir until smooth (if needed, heat an additional 15-30 seconds). Set aside to cool.
  • To make the filling, mix the softened cream cheese, cocoa powder and sugar in a large mixer bowl until combined well.
  • Add the sour cream and vanilla extract and mix until well combined. Set aside.
  • In another large mixer bowl, add the heavy whipping cream and powdered sugar and whip on high speed until stiff peaks form or you can use Cool Whip if you wish.
  • Add in cooled down melted chocolate and mix until smooth and fluffy.
  • Carefully fold the whipped cream into the cheesecake filling.
  • Divide the filling between the 12 cheesecake cups until the cups are full. It's easy to use a large piping bag to add the filling, but spooning it in would work as well.
  • Refrigerate cheesecake for 4 hours, or overnight.
  • Before removing cheesecakes from the springform pan, slide a butter knife around the edges of the Mini-Cheesecakes first for easy removal and slide the bottoms upward to release the cheesecakes.. Or remove the cheesecakes from their wrappers, if desired for serving.

Chocolate Whipped Cream

  • For the whipped cream topping, beat cold heavy whipping cream with powdered sugar and cocoa powder on high speed until stiff peaks form (about 3 minutes).
  • Pipe onto the top of the cheesecake or spread it evenly and sprinkle with chocolate chips, chocolate curls or chocolate sprinkles.
  • Serve cheesecakes cold. Cheesecakes are best for about 4-5 days.

Ultimate Strawberry Cheesecake Pudding Filled Cupcakes

These festive and fluffy strawberry cupcakes are filled with an easy creamy cheesecake pudding and crowned with a fresh strawberry cream cheese frosting that is the ultimate treat!  Everyone will go crazy over them, because who doesn't love strawberries and cheesecake flavors together!

Ultimate Strawberry Cheesecake Pudding Filled Cupcakes

You can get strawberries all year round, thankfully, so these cupcake gems are perfect for Valentine's Day, Christmas, Mother's Day and of course, Birthday parties!  You can't go wrong ya know?

Ultimate Strawberry Cheesecake Pudding Filled Cupcakes

How to make Strawberry Cupcakes:

Use your favorite strawberry cake mix to make your cupcakes.  We used Pillsbury™ Moist Supreme® Strawberry Flavored Premium Cake Mix.  Thankfully it doesn't taste artificial, which we adore!

Bake the cupcakes and let them cool.  Once cooled, use an apple corer or use a sharp knife to cut out circle in the middle of the cupcakes and scoop out any extra cake so you can fill them with the filling.

Cheesecake Filling:

While the cupcakes are cooling, you can make the cheesecake filling.  We used a small vanilla pudding mixed with ½ cup almond milk, 1 ½ cups whipped cream (we made fresh but for a shortcut, use Cool Whip if preferred and 4 ounces of softened cream cheese.  Whip it all together and get the most delish creamy cheesecake pudding, which is amazing all by itself!

Pipe the pudding into each of the cupcake centers and make your frosting!

Ultimate Strawberry Cheesecake Pudding Filled Cupcakes
Strawberry Cream Cheese Frosting:

Use 10-12 fresh large strawberries and purée them in a blender or food processer.  Place the puréed strawberries in a microwavable container and nuke them on high for 4 ½ minutes.  Stir them 1-2 times while they are cooking while the mixture thickens up and condenses down.  Place mixture in freezer or fridge to cool mixture off.  When making the frosting, if the purée is not reduced to the correct amount it will make frosting runny.

Using a mixer, whip 1 cup softened unsalted butter and 8 ounces of softened cream cheese until fluffy and creamy. Add ½ of the confectioners' sugar and mix on medium until mixed well.  Add pureed strawberries, vanilla, salt and beat together.  Add remainder of powdered sugar until icing is desired consistency.

Pipe on the icing. And DEVOUR!  For a shortcut, you can of course buy 2 tubs of vanilla frosting and 1 8 ounces of softened cream cheese whip them together.  Add some pureed strawberries to give them a fresh looking strawberry cream cheese frosting.

All you need is a heart shaped cookie cutter or cookie cutter of choice to make your shapes.

You can also use a cookie scoop and roll them into balls and dip as well, but since Valentine's Day is coming up, we went with these cute heart truffle candies!  Aren't they adorably cute?

I just used my Home-Made Chocolate Peanut Butter Eggs recipe and added some chopped Butterfinger candies to the mix and voila!  Butterfinger Peanut butter yumminess!

Transfer the candy dough to a baking sheet covered in parchment paper. Roll the candy dough out with a rolling pin or flatten out with hands ½ inch thick.  Use cookie cutter and make your shapes.

Transfer to fridge to firm up. Once firm, melt the chocolate and dip one a time, placing some Butterfinger crumbles on top and place back onto parchment lined baking sheet.  Back to the fridge and let the chocolate firm up.

Easy Microwaveable Oreo Fudge

January 4, 2021 By Kim Lange 7 Comments

This amazing Oreo Fudge has only 3 ingredients and it's super easy to whip up in just a few minutes!  What could be better than a simple creamy white chocolate fudge plenteous with our favorite cookies, OREOS included in every luxurious bite!

No thermometer, no stove, just a microwave, a microwaveable bowl and 3 ingredients, consisting of premium white chocolate, sweetened condensed milk and the divine obvious, OREOS!

Oreos are my favorite store-bought sandwich cookies and they are way too hard to resist!  Especially when you add them in fudge.  OMG!

How to make Oreo Fudge!

No worries! All you do is heat the sweetened condensed milk for about 30-40 seconds, then add and melt the white chocolate with the sweetened condensed milk until the chocolate is melted.  Add chunks of Oreo cookies and mix, then spread it into a pan, and let it sit until firm. That’s it!

Heating the sweetened condensed milk up a bit before adding the chocolate in the microwave makes the fudge smoother, creamy and easier to mix together.

Ingredients

  • 1 14 oz can sweetened condensed milk
  • 18 oz high quality white chocolate chips approximately 1 ½ bags or 3 cups
  • 3 cups oreos roughly chopped approximately 20 oreos

Instructions

  • Prepare an 8x8-inch pan with wax or parchment paper that comes up the sides of the pan so you can pull out the whole slab of fudge once it sets.
  • Add sweetened condensed milk to large microwaveable bowl and heat for 30-40 seconds. Add white chocolate chips into the sweetened condensed milk and mix together. Place back in microwave and heat in 30 second increments until chocolate is melted and mixture is creamy, working quickly.
  • Stir in the chopped Oreo cookies, saving a few pieces to press into the top.
  • Pour mixture into prepared pan.
  • Quickly spread fudge evenly with a spatula. Press extra chopped Oreo cookies on top. Let rest at room temperature until set. (Refrigerating the fudge will help it set faster.)
  • Pull the fudge slab out of the pan using the edges of the parchment paper. Cut into squares. Store at room temperature in an airtight container for 5 to 7 days.

Here are a few more ideas you can incorporate into your French toast recipe for some change-up fun!

Add a few tablespoons of RumChata to give it an extra kick!  It's a lovely cream liqueur flavored with cinnamon and vanilla, perfect for this dessert French toast bake!
Use any bread you like!  We used French, but you could use sourdough, cinnamon swirl bread, challah, loaf bread of any kind or even some sandwich buns.
Swap in any non-dairy milk instead of the dairy milk, like almond milk or coconut milk.
Use your favorite doughnuts or leftover cake instead of bread to take it to the next level!  Seriously insane!
Add some crispy, crumbled bacon or sausage and add it to the mix or add it on top or both.
Add some of your favorite fruit such as strawberries, blueberries or raspberries as a fresh fruit on top or add it to the mix as well.

Then assemble everything together in 2 minutes and just pop it in the oven in the morning. The fam will go crazy over this and you'll be happy you made it!  Plus, the aroma is intoxicating!
