Healthy Strawberry Chocolate Chip Muffins Made with Greek Yogurt

The ingredients in these muffins are pretty healthy overall and you can’t beat home-style muffins, now can ya? I love to use Greek yogurt, so this muffin recipe is a great way to use up Greek yogurt or add it into your muffins for more protein and Greek yogurt is an excellent source of calcium, which can help improve bone health.

It also contains probiotics, which supports a healthy bacterial balance in the gut. Eating Greek yogurt may be associated with lower blood pressure and a lower risk of type 2 diabetes, plus there’s a whole slew of reasons why it’s good for you!

As far as eating these strawberry chocolate muffins, I love it when the chocolate chips gets all melty and I like slathering them with just a little butter or strawberry jam. Aren’t they lookin’ so delish? These are best warm right out of the oven or microwaved.

If you want to lighten them up even more, of course you can leave the chocolate chips out completely or sprinkle the tops of the muffins with some random mini chocolate chips for a little chocolate flava!  You may love these chocolate chip peanut butter pancakes for another breakfast option!

Ingredients You’ll Need for Blender Strawberry & Chocolate Breakfast Muffins Recipe

How to Make Blender Strawberry & Chocolate Breakfast Muffins

  1. Preheat oven to 400 degrees. Line 12 muffin tins with cupcake liners or spray muffin pan with non-stick spray.
  2. Pour all of your ingredients in a blender or food processor (except the strawberries and chocolate chips) and pulse in short bursts until oats are smooth, but do not overmix!  Just pulse the mixture several times to get the mixture blended!  Mixture will be thick.
  3. Pour and scrape batter into a medium sized bowl, and fold in 1 cup of diced strawberries and the chocolate chips.
  4. Divide batter into the muffin tins and divide remaining ½ cup diced strawberries over the top of each muffin.
  5. Bake for 17-22 minutes, or until a toothpick inserted in the center comes out clean.

Blender Tips & Other Options

  • Make sure not to overblend or mix these muffins.  It’s better to do short pulses to get the mixture blended up without overmixing either in a blender or food processor.
  • You can also use the mixer or whisk to make these muffins, but I would pulse the oats first and go from there.

Ingredients
  

  • 1 ½ cups all purpose flour or whole wheat flour or 1/2 & 1/2
  • ¾ cup Greek yogurt
  • ½ cup oats

  • ½ cup maple syrup or honey
  • ¼ cup brown sugar optional, if you want more sugar flavor
  • 3 tablespoons oil of choice or butter, melted
  • ¼ cup milk of choice
  • 1 tablespoon vanilla extract

  • ½ cup semi-sweet chocolate chips mini semi-sweet chocolate chips or for extra skinny, just add 1/4 cup and sprinkle randomly on top of muffins.

Well, typically for Greek Yogurt, you can substitute 3/4 cup of sour cream, butter, cream cheese, buttermilk, mayo or oil and for the maple syrup you can substitute aguave syrup, honey or 1 cup of your granulated, organic, coconut or Stevia. I hope you find something that works. I don’t know what the outcome will be when changing up the ingredients, because using different ingredients can cause the texture to change somewhat sometimes. I would love to know what you come up with! 🙂
