Awesome Chocolate Chip Pumpkin Cookies

These pumpkin cookies are soft, not cakey, yet they are very light and because of the pumpkin, no eggs are needed.  You’ll love the pumpkin spiced and chocolate yumminess in every bite, especially when you use Ghirardelli Bittersweet 60% Semi-sweet Chocolate Chips.  Yum!!

Ingredients You Need for Pumpkin Chocolate Chip Cookie Recipe

How to Make Awesome Chocolate Chip Pumpkin Cookies

  1. Preheat the oven to 325 degrees. Line baking sheet with parchment paper or spray with non-stick spray.
  2. Using a mixer, in a bowl, cream together the butter and sugars until light and fluffy.
  3. Add pumpkin, vanilla and water, and mix until combined.
  4. Add in the flour, baking powder, soda, salt, cinnamon and pumpkin spice to the pumpkin batter and mix until combined. Stir in the chocolate chips.  Cookie dough will be very soft.
  5. Drop the cookie dough by heaping tablespoonfuls or a small cookie scoop onto the prepared baking sheet.
  6. Bake for 10-11 minutes until the edges are set.
  7. Let them cool 3-4 minutes on the baking sheet before removing to a wire rack to cool completely.
  8. The cookies will flatten out a bit while they cool.

Ingredients
  

  • 1 cup butter softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 cup canned pumpkin puree
  • 2 teaspoons vanilla
  • 2 tablespoons water or milk
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ teaspoon pumpkin spice
  • ¾ cups Ghirardelli 60% bittersweet semi-sweet chocolate chips
