So, lately, I’ve been making a lot of desserts and trying to find healthier ways to eat dessert, thus sugar-free right?  Because, I love dessert, this has to happen! 

I don’t like sugars with weird aftertastes or remotely taste like sugar. You know what I mean? Especially if you need or want to watch your sugar intake without sacrificing your dessert cravings when the sweet tooth hits! 

However, I’ve found a healthy sugar option that works as you will see!

Apple Cinnamon Coffee Cake Recipe

Apple Nut Sugar Mixture

  • chopped walnuts & pecans, combined or whatever nuts you want
  • ground cinnamon
  • sugar or healthy sugar substitute of choice, I used Lakanto’s healthy ¼ cup brown sugar ¼ cup sugar-combo
  • 2 medium apples, peeled and chopped thin

Simple Brown Sugar Glaze

  • brown sugar or healthy sugar substitute, I used Lankato’s healthy brown sugar
  • butter
  • confectioners’ sugar or healthy confectioners sugar substitute, I used Swerve Confectioners’ Sugar

How to Make Apple Cinnamon Coffee Cake

Apple Cinnamon Coffee Cake

  1. Combine the flour, baking powder, baking soda and salt in a bowl, set aside.
  2. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla.; add flour mixture to creamed mixture alternately with sour cream or Greek yogurt, beating well after each addition.

Apple Nut Sugar Mixture

  1. In a small bowl, combine the nuts, cinnamon and sugar.
  2. Spread half of the batter in a well-greased 10-in. tube pan with a removable bottom. Top with apple chunks; sprinkle with half of the nut mixture. Top with remaining batter, then with remaining nut mixture.
  3. Bake at 375° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 30 minutes. Carefully run a knife around edge of pan to loosen. Lift cake with removable bottom from pan. Cool completely. Before serving, carefully lift cake from pan bottom.

Simple Brown Sugar Glaze

  1. Combine butter and brown sugar in a microwavable bowl until melted, about 30 -45 seconds and add powdered sugar if you want a thicker glaze and whisk until smooth.
  2. Drizzle over coffee cake. (If glaze thickens, place in microwave for 15-20 seconds for drizzle consistency). Serve warm or at room temperature.

Tips For Coffee Cake

  • To make sure the coffee cake is done, you can insert a toothpick or paring knife into the center of the cake to see if the crumb has set. If the tester comes out clean, it’s done. If it comes out gummy or with crumbs clinging to it, the cake needs to bake some more.
  • Adding too much flour can result in dry, crumbly cake.  Make sure to measure flour correctly.
  • If you like protein, adding Greek yogurt instead of sour cream is a great source for more healthy benefits.
  • I like to slice apples thin for this coffee cake, so they cook through through all the way. If you want larger chunks, you may want to cook them up a bit before adding them.

Apple Cinnamon Coffee Cake

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butter softened
  • 1 ⅓ cup sugar or healthy sugar substitute of choice about ⅔ cup - I used Lankato’s)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup sour cream or plain Greek yogurt

Apple Nut Sugar Mixture

  • ½ cup chopped walnuts & pecans, combined or whatever nuts you want
  • 2 teaspoons ground cinnamon
  • ½ cup sugar I used Lakanto’s healthy 1/4 cup brown sugar ¼ cup sugar-combo
  • 2 medium apples peeled and chopped thin

  2. I want to make this for a charity making auction but they pick up the cakes 3 days before the event. Will the drizzle be ok on top for three days?

  3. Yes you can freeze it, but I would add the glaze afterwards. I used Granny Smith, those are my fave, but you could use Honeycrisp, Braeburn, Mutsu, Winesap, or Pink Lady as well. You could use a different pan, but I like it because of the shape and yes, easily removable. Hope you enjoy!!

  4. Very interested in making this gorgeous cake , but I am wondering if it can be frozen with the glaze or is that something that should be added after defrosting..
    what kind of apples are you using as some varieties get really mushy when baked.
    Lastly is it really necessary to use a tube pan, or is it because of the easy removable.
