Ingredients
Fudge Layer
½cupbutter
⅓cupunsweetened baking cocoa
¼cuppacked brown sugar
¼cupmilk
3-1/2cupsconfectioners' sugar
1teaspoonvanilla extract
Salted Pecan Caramel Layer
30caramelsunwrapped
1tablespoonwater
1-2cupspecansdepending on your nut preference, coarsely chopped
sea salt
Salted Chocolate Layer
½cupsemisweet chocolate chips
½cupmilk chocolate chips
sea salt
Instructions
Spray an 8" baking pan with non-stick spray and set aside.
Fudge Layer
In a large microwave-safe bowl, add the butter, cocoa powder, brown sugar and milk and microwave on high until mixture boils, for approximately 2 minutes.
Add in confectioners' sugar and vanilla and stir until combined and pour into baking pan and spread out evenly.
Place in fridge until set enough to add salted pecan caramel layer.
Salted Pecan Caramel Layer
In another microwave-safe bowl, heat caramels and water on high for 1-1/4 minutes or until melted.
Stir pecans into caramel and stir until combined; add a couple of pinches of sea salt to your liking.
Spread on top of fudge layer. Place in fridge until cooled enough for chocolate layer.
Salted Chocolate Layer
Microwave chocolate chips on high for 30 seconds or until melted.
Spread over caramel layer with back of spoon.
Add a couple of pinches of sea salt. (I sprinkled then mixed it into the chocolate with the back of spoon.
Chill until firm. Cut into small squares, very rich!
Notes
You can also do this fudge layer on the stove, stirring frequently as another option.
