Instructions
Preheat oven to 350 and spray with a non-stick spray a 9x5 loaf pan and set aside.
Using mixer, cream butter until light and fluffy; add sugar and mix until well blended.
Add eggs one at a time,, each time mixing until fully incorporated, then add vanilla and mix in.
In another bowl, whisk together the flour, baking powder and salt.
At low speed, add dry ingredients alternately with banana puree.
Scrape batter into the prepared pan.
Place in oven and bake until center of cake bounces back when lightly pressed with a finger or a toothpick comes out clean for about 60 minutes.
Let sit in pan for 15 minutes before removing. Let cool.
Add chocolate frosting by heating in microwave for 20-30 seconds and stir and pour onto the cake. Let glaze set and serve when ready.
OR you can make your own:
Melt chocolate and butter in microwave 20 second increments until melted, approx 2 minutes.
Using whisk or mixer, add powdered sugar and mix to get a nice consistency to pour over the pound cake.
Let chocolate set, then slice and devour! YUM!
Notes
You can substitute vanilla or cream cheese frosting for the chocolate if you want to change it up.
