Why I Love These Pumpkin Oat Chocolate Chip Bars

October marks the beginning of the most beautiful season of the year! One of the most favorite and popular ingredients in its peak of the season, is pumpkin!  Yay!! These bars fall right into line with the season, I would say!

This Pumpkin Oat Chocolate Chip Bars recipe was adapted from Delish Chocolate Chip Peanut Butter Oatmeal Bars which are super, super yummy too!!  If you want a super healthy pumpkin oat bar, you really need to try these Pumpkin Cranberry Chocolate Chip Oatmeal Bars!  Both are totally yummy

What I really, really like about this pumpkin bar recipe is that it is so versatile!

  • If you want a healthier, more textured bar, sub some of the all-purpose flour with some oat flour and add old-fashioned oats versus quick oats.
  • Also healthier…Switch out the sugars with healthy sugar alternatives like monk fruit or coconut sugar.
  • If you want them to be more blondie-ish, omit an egg.  I love that!  
  • For a fun twist, add a combination of white chocolate chips, peanut butter chips or butterscotch chips with the chocolate chips!
  • Add your favorite nuts, like pistachios, walnuts, macadamia nuts or pecans! 
  • I love adding dried cranberries to pumpkin recipes! It really brings out the Thanksgiving vibes! 

Soft Pumpkin Chocolate Chip Bars recipe

Gather Your Ingredients

  • unsalted butter softened
  • brown sugar
  • granulated sugar
  • canned pumpkin
  • eggs
  • all-purpose flour – If not using oats, use 2 cups of flour (can also use ½ wheat flour and ½ all-purpose flour for healthier option.)
  • baking soda
  • salt
  • pumpkin spice
  • old-fashioned oats or quick oats
  • semi-sweet chocolate chips, save out some for sprinkling on top

How to Make Pumpkin Oat Chocolate Chip Bars

  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream together butter and sugars and then add pumpkin and beat in until smooth.
  3. Beat in the eggs one at a time until well blended.
  4. Combine the flour, baking soda, pumpkin spice and salt together in a bowl, then pour and stir into the wet mixture and mix until just combined.
  5. Mix in the oats and chocolate chips until just combined.
  6. Spread into 2 – 8×8 greased pans or a 13×9 greased pan, add saved out chocolate chips and sprinkle on top and bake for 15 to 20 minutes for 2 – 8×8 pans or 20-25 minutes for 13×9 pan or until just light brown.
  7. Don’t over-bake for best results.
  8. Cool, cut and store in an airtight container.

Storing Pumpkin Bars

  • Store the pumpkin bars in an airtight container in the refrigerator for up to 1 week or at room temperature for 1-2 days.
  • Freeze in a large zip lock bag for up to 3 months.

Notes

To make these more like blondie-ish, omit an egg.
Add less chocolate chips to batter for less chocolate flavor.
