These scrumptious cinnamon cookies are way, way addicting and guess what?  They never made it to the next day, let alone a few hours.  It’s no wonder!!

It’s like absolute heaven with that aromatic gorgeous aromatic cinnamon bun smell drifting about in the house.  Intoxicating!

So, I have 2 Ways to Make These Cookies 

You can make them from scratch from my Snickerdoodle Cinnamon Chip Cookies recipe or you can use Pillsbury Cinnamon Bun Flavored Cookie Mix.

Both are amazing, you just have to choose which one you want to go with!

Snickerdoodle Cinnamon Chip Cookies

The home-made snickerdoodles are super easy to make, as is the boxed cookie mix.

As for the cookie mix, Just follow the directions and add some extra white chocolate chips for a fun flavor twist with the Pillsbury Cinnamon Bun Cookie Mix.

Everything is already included as far as cinnamon candy bits and you adding the ingredients required, water, oil & eggs.  However, since these cookies are seasonal, so you may not be able to get it.  That’s why we gave you the other option to make them home-made.

Also, if you don’t want to  make the frosting, you can buy the cream cheese frosting or even frost them with vanilla frosting.  Whatever makes your life easier.  All I know is, we want cookies! 🙂

These soft, thick and chewy classic cookies are deliciously loaded with cinnamon chips and rolled in cinnamon sugar to give them crispy edges in every bite!  If you love snickerdoodles, I guarantee you'll love these cinnamon sugar delights for your fall and holiday baking!  Each of these cookies are a full quarter cup scoop of cookie dough, so it's the perfect cookie size for satisfying snacking!

Ingredients
  

Snickerdoodle Cinnamon Chip Cookies

  • ½ cup unsalted butter softened
  • ¼ cup brown sugar
  • ½ cup white sugar
  • 1 large egg
  • 2 teaspoons vanilla
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup cinnamon chips plus more for tops of cookies
  • Cinnamon sugar for rolling

Cream Cheese Frosting

  • 1 8 oz cream cheese, softened
  • ½ cup butter, room temperature
  • 1 cup powdered sugar add more if needed
  • 1 teaspoon vanilla extract

Instructions
 

Snickerdoodle Cinnamon Chip Cookies

  • In a mixing bowl, cream together the softened butter and both sugars until fluffy for a couple of minutes.
  • Beat in the egg and vanilla.
  • Mix in the flour, baking powder and salt until just combined. Do not over-mix, dough should be wet, but crumbly looking.
  • Scoop dough balls out with 1/4 cup cookie scoop.
  • Roll balls in sugar and place on parchment lined cookie sheet while you preheat the oven.
  • Preheat oven to 375 degrees.
  • Bake cookies 2 inches apart for 15 minutes. Do not overbake to keep them soft and chewy style.
  • Let cook 5 minutes and then transfer to a baking rack.
  • For smaller cookies, use 1.5 or 2 tablespoon cookie scoops and bake for 10-12 minutes.

Cream Cheese Frosting

  • Sift the powdered sugar and add the cream cheese, butter and vanilla to the bowl and using a mixer, start beating thoroughly until fluffy and completely smooth.
  • To decorate, transfer frosting into a pastry bag with a star or round tip. Start in the middle of the cookie piping the frosting and continue in a circular motion until you reach the outside.
  • Dust with cinnamon if desired.

Ingredients
  

  • 1 box Pillsbury™ Cinnamon Bun Flavored Cookie Mix + ingredients
  • 1 cup white chocolate chips

Whipped Cream Cheese Frosting

  • 1 brick cream cheese 8 oz, softened
  • 8 tablespoons butter 1 stick, room temperature
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

  • Make cookies as directed on box.
  • Tip: Slighty flatten cookies to get a flatter cooker, or else the will be very puffy and don't overbake to get a soft batch cookie.
  • While cookies are baking, prepare the frosting.

Frosting

  • Sift the powdered sugar and add the cream cheese, butter and vanilla to the bowl and using a mixer, start beating thoroughly until fluffy and completely smooth.
  • To decorate, transfer frosting into a pastry bag with a star or round tip. Start in the middle of the cookie piping the frosting and continue in a circular motion until you reach the outside.
