Hey there!  I’ve got another awesome cake loaf recipe I want to share with you!  It’s Blueberry Fritter Loaf and it’s bursting with fresh blueberries, cinnamon and sugar in a delicious cake loaf.  It smells amazing and wait until you taste it!  Even more amazing!

Country Blueberry Fritter Loaf

It’s such a lovely, fluffy, buttermilk cake loaf loaded with blueberries, layers of cinnamon and sugar inside and on top and then it’s drizzled with an old-fashioned cream glaze.  *Swooning yet?

This Country Blueberry Fritter Loaf is adapted from my Awesome Country Apple Fritter Bread on the blog, that has been so popular on Pinterest!  If you liked that bread, you will definitely like this.   It’s basically the same recipe except  we used blueberries. 🙂 

This blueberry fritter bread recipe is a great way to use some of those fresh blueberries you’ve recently picked or gotten from the market.

It’s like a blueberry cake fritter without frying it in hot oil, like canola oil or vegetable oil!

Ingredients You Need

Cinnamon Brown Sugar Mixture

Blueberry Fritter Loaf

  • sugar
  • butter, softened (can use salted or unsalted, add a pinch of salt if desired)
  • eggs
  • vanilla extract
  • all-purpose flour
  • baking powder
  • buttermilk or milk of choice, like whole milk or almond milk
  • fresh blueberries, frozen can be used as well

Old-Fashioned Creme Icing

  • powdered sugar or icing sugar
  • milk or cream- depending on thickness of glaze wanted

How to Make Blueberry Fritter Bread 

  1. Preheat oven to 350 degrees. Use a 9×5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
  2. Stir together the brown sugar and cinnamon together in a bowl. Set aside.
  3. In a large bowl, beat white sugar and butter together using an electric mixer until smooth and creamy.
  4. Beat in eggs, 1 at a time, until blended in; add in vanilla extract.
  5. Combine & whisk the dry ingredients of flour and baking powder together in another bowl then gradually add the flour mixture into creamed butter mixture and mix until just combined.
  6. Mix buttermilk into batter until just combined.   Add blueberries and fold in.
  7. Pour half the batter into the prepared loaf pan; and then sprinkle half the brown sugar/cinnamon mixture on top of batter spreading it out
  8. Pour the remaining cake loaf batter over the cinnamon/sugar and repeat sprinkling with the remainder of the sugar/cinnamon mixture on top.
  9. Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 50-60 minutes.
  10. To make vanilla icing, mix powdered sugar and milk or cream together until well mixed.
  11. Let cool for about 15 minutes on a cooling rack before drizzling with glaze if you want it to soak in. You can also drizzle with glaze after it’s cooled or do a dusting of powdered sugar on top!

More Variations For Blueberry Bread Recipe

  • Frozen blueberries can be used as well as fresh berries or fruit in this recipe. Use other fruits, like apples, raspberries, peaches or cherries!
  • For some added freshness: Add 1 teaspoon of lemon extract or 2-3 tablespoons lemon juice to give it a fresh pop of taste. A tablespoon of lemon zest is also an option!

Why Toss the Blueberries In Flour Before Baking?

  • Toss the fresh or frozen blueberries with a tablespoon of flour.  This handy tip with keep them from sinking to the bottom of the loaf while it’s baking.

 

How Do I Store Blueberry Fritter Bread?

  • Store bread at room temperature for up to 4 days in airtight container.  Slice as needed and for an extra yummy treat, place in the microwave for 10-20 seconds for a warm apple fritter bread delight!

Can I Freeze Blueberry Fritter Bread?

  • Yes! Once baked & cooled, wrap in saran wrap or store in a freezer safe container or bag for up to 3 months.  Freeze the loaf whole or cut it into slices to freeze it in individual portions. I would glaze after it’s thawed out overnight in the fridge, so it’s not as sticky.

    1. Hi Sharon! I’m so happy you’re here! Happy New Year! As far as adding lemon extract or juice, you can add it to either the batter or the glaze or both. I also have Lemon Blueberry Explosion Loaf as well as an option, but it won’t have the cinnamon swirl layers like the blueberry fritter bread. Both delicious! 🙂

    2. Hi Kim, just saw the segment you did on food network’s kitchen, which brought me to your delightful blog. QUESTION about this recipe… in the notes you mention adding lemon extract or juice to give it a pop of freshness. Is that added to the glaze or the batter?
